Pineapple Salsa
This recipe serves: 6  
1 cup diced, fresh pineapple
1/4 cup diced red onion
1/2 cup diced red pepper
1 jalapeño chili pepper, seeded and diced
1 tablespoon chopped cilantro
1 tablespoon fresh lime juice

Cooking Instructions
1. Combine all of the ingredients in a small mixing bowl. Store in the refrigerator for up to 8 hours before serving. Serve as a condiment with grilled chicken and fish.
