Goat Hill Farm Tomatoes with Basil Vinaigrette
For the vinaigrette:
1 tablespoon red wine vinegar3 tablespoons extra virgin olive oil
1/2 tablespoon chopped, fresh basil
salt to taste
freshly ground black pepper
For the salad:
1 1/2 large ripe, sliced tomatoes, assorted varieties and colors2 slices red onion
basil leaves for garnish
2. Adjust the salt and pepper to taste.
3. Arrange the tomato and onion slices on 2 serving plates. Sprinkle generously with the vinaigrette. Garnish with basil leaves and a few twists of pepper.
