Goat Hill Farm Tomatoes with Basil Vinaigrette

This recipe serves: 
For the vinaigrette:
1 tablespoon red wine vinegar
3 tablespoons extra virgin olive oil
1/2 tablespoon chopped, fresh basil
salt to taste
freshly ground black pepper
For the salad:
1 1/2 large ripe, sliced tomatoes, assorted varieties and colors
2 slices red onion
basil leaves for garnish
Cooking Instructions
1. Place all the ingredients in a container with a tight-fitting lid. Shake well.

2. Adjust the salt and pepper to taste.

3. Arrange the tomato and onion slices on 2 serving plates. Sprinkle generously with the vinaigrette. Garnish with basil leaves and a few twists of pepper.

Serving Size: tomatoes and onions with 2 tablespoons of vinaigrette
