Grilled Coconut Shrimp with Pineapple Salsa

I will be making this dish many more times in the future!! I was browsing the recipes yesterday and found that I had all of the ingredients except for a few minor changes. Instead of the crushed pineapple I used tidbits and we didn't have a jalapeno pepper so we substituted a serrano chilli pepper (same great taste!)and we were very happy with the results, in fact I think that I will make it this way again.

This recipie is now one of my favorites! We try to eat healthy but it is hard when we are so busy. This website makes that a lot easier!

This was SO great! I absolutely loved it. try using the leftover coconut milk to cook the rice, it brings out the flavor really well. I would make this again and again!

I did not think the shrimp had a lot of the coconut flavor I was expecting. Did I perhaps not marinate it long enough? I went for the hour marinade as I was in somewhat of a hurry, but it didn't pick it up. What's the recommended time by others who have tried this?
