The potatoes were delicious. The scallions were kind of over-powering. I will use less next time. I will also roast the garlic for a little bit longer next time. All in all, it was a good sidedish.
This was an excellent recipe, although I prefer Yukon Gold Potatoes for making mashed potatoes. This was an excellent side for the Grilled Flank Steak with Red Pepper Pesto, but be forwarned, this is a quick recipe, but with the Grilled Flank Steak it will be a lot of work-definitely worth it though if you have the time for prepping.
