This is an excellent side dish, even my kids ate it. It's got good colorful veggies in it too!

This is a very tasty and very versatile recipe. Instead of preparing it cold, I sauteed the onions and peppers and then added it to a romain and spinach salad with shredded chicken, tomatoes, and some cheese. It was fabulous!
