Penne Pasta Casserole with Sausage, Peppers, Onions and Tomatoes

I substituted chicken sausage for turkey - couldn't find turkey in Sydney - quick to make for after work weekday dinner for family.

Maybe it was the sausage I bought, but I didn't care for the flavor at all. I doubt I would try it again even if I purchased a different kind of sausage.

Everyone was raving about it for days even my incredibly piky freind who eats almost nothing loved it.

Loved this recipe, tased great and I knew it was full of healthy veggies too. The second time I made it, I used cut up chicken breast instead of sausage and I added mushrooms. My husband liked it too, ate 3 servings!

This was a keeper!!!! It's even better because it makes enough to have leftovers.

This one is a great one to prepare ahead of time on the weekend and pop it in as you need it! Careful on the "browning" step: after you brown the casing, it's best to cut the sausage into pieces. Also, I added about 6 ounces of sausage: super tasty and filling!
