I love risotto, and butternut squash. Sooo good!
I used a melon scooper to facilitate cubing the butternut squash.
I used half parmesan and half pecorino romano cheese. The dish was fantastic!
As latin I use a lot of garlic, and i love it, this recipe is fantastic you can also do the butternut with yellow rice and add some corn and sausage. Good1 Thanks
Ended up using a lot more broth than the recipe stated. My finicky boyfriend had third helpings, so it must have been really really good!
