Barley and Black-Eyed Pea Salad

  • Easy to throw together, and makes great healthy quick lunches that will keep you feeling full! The only change I made was to use a raw yellow pepper instead of roasted, and I think it gives it a very 'fresh' taste. If you serve 1 cup of this salad over salad greens and topped with half of a broiled chicken breast, it makes a great dinner too. I'll definitely be making this again.

  • Quick, easy, and good- can not get any better.

  • I found this to be quite refreshing. The flavors are subtle, yet at the same time, noted. Does that make sense? That is, no one flavor stands out, all of them blend quite nicely.

  • I added celery, decreased the oil, and did not take the time to roast the peppers. For a short cut, you could buy a jar of roasted red peppers.
