These muffins were soooo good I had to keep from eating them all. My children both said YUM too! I added some white chocolate chips to mine for a little extra treat.

My family loves this recipe! We eat them all year round- have even had them for supper with fresh fruit. I've made them without ginger when I didn't have any but wanted something with pumpkin and they were terrific that way too! Enjoy!

I adore ginger and these tasty muffins were packed with it! Very moist and incredibly delicious--loved them.
