Zucchini and Tomato Tart

  • Based on the FoodFit recommendation and reader reviews, I made this recipe for company. I was extremely disappointed with the results. In fact, I was embarrassed I had served it. I would not make it again.

  • I tossed the tomatoes and zukes in the basil oil and then layered them in the crust and sprinkled a little more cheese on top. My Italian family raved about it. It was delicious!

  • Instead of using the zucchini, I just used tomatoes because I had so many from the market. I also substituted goat cheese for the gruyere, but I think it's the basil-garlic oil mixture that really makes this tart so delicious!

  • This was delicious! I did sprinkle a little more cheese on the top. It was very easy to prepare. I used a store bought crust. The difference in fat and calories didn't seem worth the effort of making one from scratch.

  • Delicious! Makes a great side dish for grilled chicken breast or fish or just on it's own as a vegitarian dish.
