I did not try this exact recipe. However, I must say that your reader that said the carbs are way to high and to get serious! Your reader is very confused about Healthy carbs. We NEED healthy carbs. We Need NOT eliminate all carbohydrates from our diet. We need energy to function. It's the type of carbohydrates that we consume. We need veggies, fruit, and whole grains. There are veggies in this recipe and a tortilla. As long as the tortilla is a Whole Wheat, Low Fat one it is acceptable. You could even use corn. Of course, it must be soft or baked, not fried. The general public is very confused about CARBS....I will try this recipe and let you know. I am very sure that it will be delicious!
