I had to alter the recipe a bit, as I didn't have any wild rice OR dried apricots. However, I used a Rice-a-roni type fried rice and added the cranberries, celery, etc. to it after it was cooked by the regular directions. Then I roasted the hens as this recipe directed with the stuffing I had made. It was FANTASTIC!!!
