I tried the chicken tonight. I used bottled lemon juice since I didn't have a fresh lemon. At first when I saw it, I thought it looked very dry, though it was a nice golden brown. I decided to put a lid on it for the last ten minutes. I was really surprised when we ate it, it was very moist. My husband eats a lot of roasted chicken and he really liked this and wants me to fix it again.
