This was an easy recipe that the entire family loved. Adjusting spices for our taste is done with all recipes, so it was not a problem. I think adding carrots was a great idea because it added one more vegetable for us to eat.

I agree that this recipe is better with about 1/2 tsp of cayenne, but once you add that, it is a terrific meal. I also use chicken or turkey sausage instead of pork which lowers the fat content as well. I've made it three or four times over the past few months.

No self-respecting Cajun would use carrots in a gumbo. The recipe is not nearly spicy enough.
