I used the previous suggestion and cubed everything. I made it for a Memorial Day picnic, and everyone raved!

This was a fantastic recipe. Very fresh and different. I will definitly be adding this one to my usuals. I have also tried adding a bit of rice vinegar to the salad. I found it gave a little extra zing. Combines very well with light feta cheese if your looking to make a quick lunch out of it!

I think if I were to make it again, I'd cube the cucumber and chop the onion instead of slicing them to make the pieces more uniform so there are more tastes in each bite. I'd also add more mango -- the finished salad lacked some oomph and perhaps a bit more sweet would help it.
