Roasted Root Vegetables

  • Ruled!

  • I partially pre-cook rutabagas, turnips, parsnips, etc. in the microwave and then just finish them in the oven.

  • Interesting way for me to cook root vegetables. Not time consuming when making for 4 servings. I liked them, I would make it again. I added a couple of potatoes to the mix.

  • I have taken the veges mentioned and sliced them really thin - with a potato slicer - then tossed them in olive oil and crsiped them under the griller. Fabulous! And healthier than potato chips!

  • In addition to the vegetables listed in the recipe, I tried rutabagas and turnips also. The turnips worked great, but the rutabagas did not -- they weren't tender when the cooking time was up and didn't taste good to me. But I liked the other vegetables cooked this way.
