Poached Peaches in Vanilla Syrup

I modified it by substituting 1 tsp vanilla extract for the vanilla bean, and by slicing the peaches. I used it as a topping for pancakes -- MUCH better than any syrup. For this use, you could cut back on the syrup by half.
