This is absolutely delicious!!! For my first lunch on the plan, I expected it to be a not-so-great dish, as most diet menus are, but this completely changed my thinking about this diet, and has me looking forward to tomorrow's meals!!! THANK YOU FOOD FIT!!

Delicious...kids loved it too. Next time I will brown the chicken first for best flavor.

The whole family loved it - even the kids, who usually won't eat vegetables! Instead of fresh corn, I used a 550g (about 18 oz) can of sugar-free corn kernels. To make this dish Kosher, I used soya milk instead of fresh milk.

What a hearty and yummy recipe for a chilly night. And to think it is low fat and low cal. It's a keeper. I made one change which was using evaporated non-fat milk which made it seem thick and creamy. Thanks, FoodFit
