This recipe makes more than the stated 4 servings, But is wonderful! Used McKays "chicken style" instant broth and seasoning for the stock. And used Garlic-pepper instead of just regular pepper. Works wonderfully in a Vegetarian diet. Thank You!!

This was very simple homey food, but tasty. It made a large potful, but it's so good that we're enjoying it as leftovers.

The flavor is really non-descript, which is probably why somebody suggesting adding jamon or andoille. To the author's credit, the instructions were clear and the proportions work out nicely. However, I chose to cook my rice separately and then add to a lot less chicken stock. Maybe that's why the flavor is lacking?? Anyhow, I used the filling for a meat-free enchilada and it worked out nicely. Other than as a filling, it's not worth the time.
