Black Bean Soup with Cilantro-Lime Cream

  • This is really good, but not one of my favorites simply b/c I'm not a big bean soup fan. I cooked this to go with empanadas and it complemented well. The soup isn't too time consuming, but remember to soak those beans a long time to shorten your cooking time and to ensure that the beans get as tender as possible when cooking w/o over-cooking. The cooking time for the entire mixture wasn't right - but I find that it never is with beans.

  • My husband is Mexican and this is not the traditional way that I make black beans, but I decided to try it, and it was fantastic. My children and my husband both loved it.
