The meat was very good, though it seemed a little too greasy. Perhaps using a little less oil would help.

The only thing I need for this recipe is a bigger pan, to cook all 4 pieces at once. However, if you keep the cooked scallopines on a plate in a warm oven, they will stay hot and ready to serve.
