This recipie is very easy and totally delicious. The only "problem" is that it makes way more than 18 cupcakes. I got about 30 out of it. Next time I might make it as a bundt cake and just bake it longer. No frosting needed just some powdered sugar. It's a winner!!

We chose this recipe because it didn't require a blender or a mixer (are there more of these?) and it turned out wonderfully.

I cut this recipe in half and used whole-wheat flour instead of white. I also added a teaspoon of vanilla extract, which always boosts the flavor of baked goods. I used an oversized muffin pan, so I ended up extending the baking time for another 10 minutes. It was worth it though, as the muffins were moist and delicious!

This is certainly not a diabetic's recipe! One little cake is more carbs than I'm allowed in one entire meal. Way too many calories, too! High in fat.... Wouldn't even attempt to make it for fear I would love the flavor!
