Chicken and Toasted Couscous Salad

I thought this dish was excellent! The citrus flavor was refreshing and complemented the cilantro and scallions. I loved the pearl-sized couscous, having only used the smaller grainy type before making this recipe. I didn't give it much time to chill (it was great anyway) but look forward to having it as a leftover tomorrow.

This was pretty good the night i made it, but even better as leftovers! I didn't reheat anything, just ate it cold and it was great. My recomendation would be to make it, refridgerate it, and serve it as a cool, light lunch. Would definitely make it again.

The couscous was way too overpowered by lemon and lime juice--I would definitely cut the juices in half. The chicken also needs more seasoning then just the salt and pepper--was pretty bland.
