I have been making coconut curries for YEARS now! I used this recipe as a template and modified it for my diet:
1- I do not eat warm blooded animals, so I used shrimp. I added the peeled raw shrimp at the same time as the eggplant
2- The chicken broth (warm blooded animal again) would have added too much moisture... I only used about 1/2 C of water
3- I used ONE large sweet onion (I like onion in curry) and added some sliced portobello mushrooms... red pepper and/or zuchini would be good also
4- I served it over rice
ANY COCONUT CURRY IS VERY TASTEY!!!!
