I used 4 cups of regular white rice and 5 cups of water. After boiling the lemons and salt in the water I transfered it into the rice cooker,added reg white rice and cooked it as I would any other rice. It had a rich taste of lemon. I would have however, used one less lemon so the taste would be suttle rather than strong. Also add about 1/2 cup of water more to the rice in the rice cooker to make up for the water that boiled off while boiling the lemons. Over all I would make it again. It was good.

yuck! the lemon should have the rind removed and the arborio rice is wrong! use regular rice with correct amount of water, and no lemon rind! very dissapointing recipe

I wish I'd read the reviews first!! I let it cook way longer to cook off the obviously excessive amount of water. Then I took a bite and my face hasn't lost it's pucker yet. Wowzies, wayyyyyyyy too much lemon. It was so bitter I gagged.

I wished I would have read the review from January before I made this. I agree, too much water...it did turn out soupy and the lemon rind made it VERY bitter. What a waste of expensive rice. Did the chef every look at the review from Jan 2003 and respond?

There must be a mistake in the printing of this recipe. You have way too much water (unless you are going for soup)and the amount of lemon rind makes it very bitter. If you reworked the recipe with less water and rind it might be ok.
