The pie had a spongy texture. Not sure if that is a positive or a negative. Either way it was tasty.
I loved this recipe. I doubled the batch, and made one pie with crust, six tarts and one crustless pie, which was just as good. So good took the pie with crust to work for coffee break and everyone loved it. Even people that normally don't eat pumpkin pie. This is definitely and make again.
