This is currently my husband's favorite vegetarian recipe, and it is sooo easy too.
We did add probably less than a teaspoonful of white wine vinegar to the corn relish, which nicely complements a glass of white wine for a light, quick, easy, but special meal.

Delicious, dense and meaty; the corn relish added zest (I had a jalapeno which I added)
