I served it as a warm side dish instead, and substituted fresh pumpkin for the butternut squash.
It turned out really tasty, though 3 cups of water for the quinoa was too much. Using less water would make the quinoa less mushy in order to serve this way.
Very easy though, as well as hearty and tasty.
