I made this a little different but it came out WONDERFUL!!! I put the olive oil, onion, celery and green pepper in a large pot and cooked till onion was translucent. Then added the other seasonings and broth. Then I added 2 cups UNcooked rice. Bring to a boil, cover and simmer 20 minutes, til rice is done. Stir in 2 cans drained, rinsed black beans and let stand 5 minutes till beans are heated through. Garnish with lime and cilantro. Easy And Deeelish!!
