What a great soup! Full of flavor and freezes very well. I added the splash of seasoned rice vinegar at the end as suggested in another comment - very good!

Add a splash of rice wine vinegar at the end, before you simmer.

Tastes even better the second day, after flavors have had a chance to meld. Serve over brown rice for added "bulk".
