Just made this tonight and it was great. My husband loved it. I made a change to make it even more low fat/low calorie. Instead of butter, I used 3 T. of vegetable broth. To achieve the butter consistency in the sauce, I added about 1/2 t. corn starch to 1T. of the orange juice, added that before the beets and let it come to a low boil to thicken. Worked great. Only used 2T. of the honey.
