As a potato lover, this elevates potatoes to the sublime. Simple to make, tastes delicious. Similar to Irish Boxtee-another old-time favorite of mine.

YUMMMM! The hubby enjoyed these a LOT! I used red skin potatoes and added a little Old Bay Spice for extra kick!

This was fairly easy to make and makes a good change from boiled or baked potatoes. Just remember to add enough seasoning.
