1. Preheat the oven to 350°F.
2. Wash the potatoes and cut them in quartered. Toss with the olive oil and a generous amount of salt and pepper.
3. Roast in the oven until tender, about 20 minutes. (Large potatoes will take longer.)
4. Sprinkle with parsley and serve.
