1. Pre-heat the oven to 400º F.
2. In a large mixing bowl, gently toss the whole tomatoes with the olive oil, salt, pepper and garlic if desired.
3. Spread out the tomatoes in a shallow baking dish in a single layer.
4. Roast the tomatoes for 30 to 40 minutes, or to desired doneness. Use a spatula to remove the tomatoes from the baking dish and serve warm or at room temperature.
