Ingredients

1 pound small or medium shrimp , steamed, peeled and deveined, then coarsely chopped
1/2 cup mayonaise, non-fat
1/4 cup finely diced celery
1/4 cup finely diced, sweet onion
1 teaspoon lemon zest
4 small loaves focaccia , sliced in half
4 large slices ripe tomato , sliced very thin

Cooking Instructions

For the shrimp salad:
1. In a mixing bowl, combine the shrimp, mayonnaise, celery, onion and lemon zest. Add salt and pepper to taste.

For the sandwiches:
2. Lay the focaccia slices out on a work surface and divide the shrimp mixture among the sandwiches. Top the sandwiches with the shredded lettuce and a slice of tomato. Place the focaccia tops on each sandwich.

3. Cut the sandwiches in half on the diagonal and serve.
