Warm Country Tomato and Red Pepper Soup

Ingredients

1 1/2 pounds fresh, ripe tomatoes , peeled, seeded and diced
1 cup Vidalia or Spanish onion , peeled and chopped
1/2 cup eggplant , peeled and chopped
1/4 cup pasilla green pepper , seeded and chopped
2 tablespoons garlic , peeled and chopped
4 cups low sodium chicken broth
2 tablespoons extra virgin olive oil
1 cup small, tender zucchini , scrubbed well and minced
1 tablespoon garlic , peeled and minced
2 tablespoons fresh thyme , stems removed, minced
1 tablespoon red wine vinegar
1 teaspoon hot chili sauce
1/8 teaspoon salt

Cooking Instructions

1. Light the grill.

2. Char the skin of the bell peppers on the grill. Put the peppers in a paper or plastic bag, close the bag and cool the peppers. Wipe off the charred skin, remove the stem and seeds and chop. Put the chopped peppers in a large non-corrosive soup pot.

3. Add the tomato, onion, eggplant, pasilla pepper, garlic and chicken broth. Bring the soup to a boil, lower the heat to medium and simmer the soup until the vegetables are very tender, about 30 minutes.

4. Puree the soup.

5. Just before serving, in a medium skillet over medium heat, saute the zucchini, the second garlic and the thyme in the oil. Do not brown. Stir into the soup. Add the vinegar, hot chili sauce and salt and serve.
