1. In a small skillet, heat the olive oil over medium-high heat. Add the shallots and cook until the soft. Remove from heat.
2. In a small mixing bowl, whisk the mustard, sugar and vinegar together. Slowly whisk in the warm shallot mixture.
3. Season with salt and pepper. Serve warm over greens.
